Proximate composition of the bones showed maximum moisture and protein in the Indian anchovy. Maximum content of lipid and ash and highest ratio of ash/protein in the dry matter whiteout lipid was found in anchovy kilka. The amino acid composition of the bones was determined on a dry weight basis. The total essential amino acids showed no significant difference between anchovy kilka and gold stripe sardine but showed different levels of essential amino acids to that of Indian anchovy. Total non essential amino acids in anchovy kilka and Indian anchovy were not significance but gold stripe sardine had the minimum content. Highest amount of total sulfur amino acids was found in the anchovy kilka. The amino acid score showed that three species have good essential amino acid for the growth of the human recommended by FAO/WHO. The predicted protein efficiency ratio shows that the quality of protein was high. Chemical composition of three species had a good nutritional value but some parameters were lower than the human needs. The best chemical composition observed in the gold stripe sardine. It is seems that bones powder of these kind of fish may be used as ingredient in the food industries. *Corresponding author}, keywords = {Organic components,Nutrition,Food supplement,Chemical score}, title_fa = {بررسی مقایسهای ترکیبات مغذی و پروفیل اسیدهای آمینه در استخوان های ماهی ساردین پهلو طلایی (Sardinella gibossa)، کیلکای آنچوی (Clupeonella engrauliformis) و موتو ماهی (Stolephorus indicus)}, abstract_fa = {در تحقیق حاضر به بررسی ترکیبات تقریبی و پروفیل اسیدهای آمینه در استخوانهای ماهی ساردین پهلو طلایی (Sardinella gibossa)، کیلکای آنچوی (Clupeonella engrauliformis) و موتو ماهی (Stolephorus indicus) در فصل پاییز پرداخته شد. بالاترین میزان رطوبت و پروتئین در استخوان موتو ماهی و بالاترین میزان چربی و خاکستر در کیلکای آنچوی وجود داشت. موتو ماهی با ماهی کیلکا در تمامی فاکتورها اختلاف معنی‌داری را نشان داد. اختلاف معنی دار بین ساردین پهلو طلایی و دو گونه دیگر نیز دیده شد. در بررسی ماده خشک بدون چربی بیشترین نسبت خاکستر به پروتئین در کیلکای آنچوی دیده شد. اسیدهای آمینه کل در ماهی کیلکا و ساردین پهلو طلایی فاقد اختلاف معنی‌دار بود  اما هر دو گونه با موتو ماهی اختلاف معنی‌داری داشتند. اسیدهای آمینه غیرضروری کل در ماهی کیلکا و موتو ماهی فاقد اختلاف معنی‌دار بود  و کمترین میزان در ماهی ساردین پهلو طلایی مشاهده شد. کمترین میزان اسیدهای آمینه بازی در موتو ماهی و بیشترین میزان در ماهی ساردین پهلو طلایی بود. همچنین بیشترین میزان اسیدهای آمینه سولفوردار در کیلکا ماهی دیده شد که اختلاف معنی‌داری را با دو گونه دیگر مورد مطالعه نشان داد. در بررسی شاخص شیمیایی هیچ اسید آمینه ضروری در سه گونه ماهی کمبودی را در مقابسه با پروتئین مرجع نشان نداد. بر این اساس ترکیب استخوان هر سه گونه ماهی مورد مطالعه کیفیت خوبی را از نظر تغذیه‌ای نشان می‌دهند اما در برخی از پارامترها ضعف دارند. بهترین ترکیب مشاهده شده در ساردین پهلو طلایی بوده و کیلکای آنچوی و موتو ماهی در جایگاه بعدی هستند. درنتیجه به نظر می‌رسد استفاده از پودر استخوان این ماهیان بعنوان مکمل غذایی در صنایع غذایی توجیه‌پذیر باشد.}, keywords_fa = {ترکیبات آلی,تغذیه,مکمل غذایی,شاخص شیمیایی}, url = {https://isfj.areeo.ac.ir/article_110042.html}, eprint = {https://isfj.areeo.ac.ir/article_110042_1bea8f08069e6ffdd017d4d1091cd556.pdf} }
