The experiments was conducted to determine chemical tests including peroxide value (PV), thiobarbitoric acid (TBA), total volatile bases nitrogen (TVB-N), pH and total viable count (TVC) and psychrophilic count (PTC) as bacterial tests at 3 days intervals with triplicate. Findings showed that the PV content was significantly higher than that from control treatment as it was increased from 0.64 on the first day to 5.41 meq O2 on the 12th day (p<0.05). The TBA and TVB-N amounts were increased in the control treatment until 15th day so that it was recorded 0.43 mg malondialdehyde for TBA and 32.8 mg N for TVB-N on day 15  with a significant difference compared to those containing PE (p<0.05). The pH value was significantly higher in control than groups treated with PE during the whole storage period (p<0.05), with an increase from 7.14 at day 1 to 8.08 at day 15. The TVC and PTC bacteria from treated groups with PE were significantly lower than those from control wherein TVC and PTC bacteria were increased in the control from 3.55 to 3.25 to 6.64 and 5.96 log cfu/g, respectively (p>0.05); but it was remained lower than the proposed acceptable limit (7 log cfu/g). Based on the findings of the present study, 4% PE can use for enhance the shelf life of the common kilka surimi at refrigerator.}, keywords = {Surimi,pennyroyal extract,Common Kilka,Shelf life,TVC}, title_fa = {بررسی کیفیت شیمیایی و باکتریایی سوریمی تهیه شده از ماهی کیلکای معمولی (Clupeonella cultriventris) حاوی عصاره پونه (Mentha pulegium) طی نگهداری در یخچال (°C 1±4)}, abstract_fa = {در این تحقیق، تاثیر مقادیر مختلف عصاره پونه (0، 2 و  4 درصد  وزنی- حجمی) بر کیفیت شیمیایی و باکتریایی سوریمی حاصل از ماهی کیلکای معمولی طی مدت 15 روز نگهداری (1، 3، 6، 9، 12 و 15) در دمای یخچال (°C 1±4) مطالعه شد. آزمون‌های شیمیایی شامل شاخص پراکسید (PV)، تیوباربیتوریک اسید (TBA)، مجموع بازهای نیتروژنی فرار (TVB-N)، pH و آزمون‌های باکتریایی شامل شمارش باکتری‌های کل (TVC) و سرمادوست (PTC) هر 3 روز یکبار در نمونه‌ها با سه تکرار انجام شد. نتایج حاصل نشان داد در تیمار شاهد مقدار شاخص PV بطور معنی‌داری بالاتر از تیمارهای حاوی عصاره پونه بود بطوریکه از 64/0 در روز اول به 41/5 میلی اکی والان اکسیژن در روز 12 نگهداری افزایش یافت (05/0>p). میزان TBA و TVB-N در تیمار شاهد با گذشت زمان تا روز 15 نگهداری افزایش یافت بطوریکه در روز 15 مقادیر 43/0 میلی‌گرم مالون دی آلدهید برای TBA و 8/32 میلی‌گرم نیتروژن برای TVB-N ثبت گردید که افزایش معنی‌داری نسبت به تیمارهای حاوی عصاره پونه داشتند (05/0>p). مقدار pH در تمام طول دوره نگهداری در تیمار شاهد بطور معنی‌داری بالاتر از تیمارهای حاوی عصاره پونه بود بطوریکه مقدار آن از 14/7 در روز اول به 08/8 در روز 15 نگهداری رسید (05/0>p). تعداد باکتری‌های TVC و PTC طی مدت نگهداری در تیمارهای حاوی عصاره پونه بطور معنی‌داری کمتر از تیمار شاهد بود بطوریکه در تیمار شاهد مقادیر آن به ترتیب از 55/3 و 25/3 به 64/6 و 96/5 CFU افزایش یافت (05/0>p)؛ ولی از حد مجاز10 Log7 فراتر نرفت. بر اساس یافته‌های این مطالعه تیمار حاوی عصاره پونه بویژه تیمار  4 درصد می‌تواند برای نگهداری سوریمی ماهی کیلکای معمولی در دمای یخچال در کوتاه مدت مورد استفاده قرار گیرد.}, keywords_fa = {سوریمی,عصاره پونه,کیلکای معمولی,ماندگاری,TVC}, url = {https://isfj.areeo.ac.ir/article_119408.html}, eprint = {https://isfj.areeo.ac.ir/article_119408_7ed37e6c7459cf5c05d425770e1e0a87.pdf} }
